INGREDIENTS
FOR THE FILLING
1kg chicken breast
50gm achiote paste
50gm garlic
60gm extra virgin olive oil
FOR THE TACQUITOS
12 corn tortillas
800gm chicken, shredded
200ml sour cream
120ml hot sauce
chopped chives
METHOD
FOR THE FILLING
1. Combine garlic, achiote and oil in a blender and pulse until smooth.
2. Butterfly chicken breasts, removing any sinew in the process.
3. Coat chicken in marinade and roast for 20 minutes at 150 degrees.
4. Once cooked, chill completely.
FOR THE TACQUITOS
1. Using two forks, shred chicken breasts and toss with any remaining marinade.
2. Roll up filling inside corn tortillas tightly, securing with tooth pick.
3. Fry 3 tacquitos at 170 degrees for 3 minutes. Drain on a paper towel and remove toothpick before transferring to serving platform.
4. Coat with sour cream and garnish with chives.
